If anyone still has this issue, at least with AoE 1 Definitive Edition I found out how to use a better resolution: exit the game and go to "properties" and adjust the resolution, then start the game again and find the higher resolution steps in the settings. Haven't tested this with AoE 2 yet, but I hope it will work just as well.

Yes, multiplayer is alive and well. Gameplay is as "balanced" as it can be. The game, like any RTS, takes time to learn and more time to master. In the definitive edition however, there is plenty of training for new players to learn how to play the game.
